Chef Mariano has been a professional Chef for over 14 years. In his home town Valencia (Spain) he owned a restaurant, L'Ambigu, for over 9 years.

Mariano's culinary talent has been widely acknowledged and he has received significant recognition. Mariano has participated many international culinary events in Europe and US, some examples are:


* Chef of the Catering de Department for the Spain Grand Prix Championship, 1999-2000.
* Executive Chef of the Epcot Food and Wine Festival, Valencia Pavillon in Orlando, Florida, during 2004.
* On 2005, Esquire Magazine named Chef Mariano's restaurant L'Ambigu in Valencia one of the best new restaurants in the world. His ability to develop new dishes that represent his region attracted critics through out the world. Further, Yachting magazine named L'Ambigu as the best paella in Valencia. This was no small feat since paella is the national dish in Spain !!
* Executive Chef of the Gastronomic Tour of the Cuisine of Valencia, Barcelo Hotel in Prague Czech Republic, April 2005.
* Executive Chef of the Gastronomic Tour of the Taste of Valencia, L'Enfant Plaza Hotel in Washington D.C., September 2005.
* Chef for the Taste of Valencia Ribbon Cutting Celebration in honor of the commercial and cultural agreement signed by representatives of the City of Dallas and the President of Valencia. Dallas, November 2008.

On 2006 Mariano moved to the United States and he has been working in New York and Dallas where he currently resides.
